About Us
Aqua Dining, which first opened in September 2000, is the flagship restaurant of the Aqua Dining Group.
Situated above the 1930’s North Sydney Olympic Swimming Pool, it was originally caretaker’s accommodation.
In May 2011, Aqua Dining underwent a renovation under the direction of renowned architect Sidney Koh. Its unique vantage point was the central focus during the redesign.
2011 Renovation and Redesign
The modish furniture and custom fittings add a luxe feel to the dining room.
The room features sleek pearl white tables and chairs with natural beech framing and stained black seats. A Spanish Floss light fitting runs the length of the room, the first of its kind to be used in Australia.
The mood lighting control in the Floss fitting picks up the neutral tones of the interiors and soft furnishings by day and creates an intimate setting for the evening. The ambience is elegant yet relaxed, enabling guests to take in the spectacular views of the picturesque harbour.

Head Chef, Anthony Redondi
The refurbishment of the space coincides with the launch of a new Italian influenced menu from Executive Chef Anthony Redondi.
Anthony Redondi was born and bred in Sydney and has been in the hospitality industry for 22 years. His decision to become a chef at a young age came from none other than the simple love for food. Before his time at Aqua Dining, Anthony was Head Chef at Trattoria La Vigna in Camden and prior to that Executive Chef at the Stamford Hotel in Circular Quay.
Anthony also spent 2 years in Hong Kong working in fine dining Italian restaurant, Alfred's Deli, and feels that his experience there helped him to develop his simplistic attitude to food. “I try to use natural produce to its maximum potential and use simple methods of cooking and additives to compliment the dish,” he says.
Having previously worked for Aqua Dining in 2007 as Sous Chef, Anthony rejoined the group in 2010 with his new title.
Managing Director, Bill Drakopoulos
The Aqua Dining Group, owned by Bill Drakopoulos, boasts 5 of Sydney’s premier venues; Aqua Dining, Ripples at Milsons Point, Ripples at Chowder Bay, Ripples at Sydney Wharf and Ripples at Whale Beach.
With thirty years experience in the hospitality industry, Bill combined his expert knowledge of restaurant operations with his passion for customer service to undertake his own business venture. Bill has encapsulated the essence of Sydney dining with each of his venues boasting magnificent water views.
