Aqua Dining’s menu is a direct reflection of Head Chef, Anthony Redondi’s heritage, where it boasts a simplistic Italian selection of clean, crisp flavours that are appealing to the eye but even more appealing to the taste buds.

His signature dish includes the infamous char grilled swordfish served with caper berries, olives, cherry truss tomatoes, eschallots, chilli and anchovies.
